Prosciutto Wrapped Asparagus

Perfect Pairing:  Easter dinner

37 days!!  37 days until I am a married woman.  I can hardly believe the wedding is so close.  I apologize to everyone in my life who encounters me, because I seem to have forgotten how to discuss anything but the wedding.  Blogging and choreographing new Zumba routines have also moved to low priority.  Stick with me!  I will be back.  There are actually be a few food related wedding items in the works, and I plan on writing about them here.  So many fun things.

Speaking of fun things…. My bachelorette party.  Holy smokes, was that a great weekend!  I was overwhelmed when 23 beautiful ladies joined me to celebrate finding the most amazing man.

The weekend included a fun game night (wedding themed Cards Against Humanity) with my out of town besties.

This is a cooking blog, right?  Right!  Prosciutto wrapped asparagus!!  I made these bundles for the man alongside some killer meatloaf and they were amazing.

Asparagus is quickly blanched in boiling water and then plunged into an ice bath, then wrapped in salty prosciutto (that gets crispy in the oven) and topped with freshly grated parmesan and salt and pepper.  Yum.

These adorable bundles would be great at your Easter meal.  You can do all of the prep ahead of time and then throw them in the oven 15 minutes before the meal.

They are surprisingly good leftover.  Just put them under a low broiler until warmed and re-crisped.

Lemon Cream Pie

I absolutely adore lemon desserts, especially lemon pie.  It always reminds me of my sweet grandpa who always said that was his favorite.  Every time I make this pie someone in my family comments on how much grandpa would love it.

This version of lemon pie does not have a meringue topping.  Instead, on top of the standard lemon filling it has a layer of lemon flavored cream cheese and is topped off with whipped cream or whipped topping.  It is so good.

There is a fair amount of sugar and egg yolk involved in this recipe.  Needless to say, it will not filed under, “healthy”.   It is more of a celebration type of dessert.  I made this last year for Easter and it was the perfect ending for our family meal.  I am hoping to make it again this year.  I may also repeat these deviled eggs with goat cheese and herbs as an appetizer.  They are just so springy!

This post also gives me a chance to rave about my favorite pressed pie crust recipe.  The crust is made right in the pie plate (nothing to roll out) and it is the best pie crust I have ever had.  My tomato pie (sounds weird, but it is crazy good) post gives step by step instructions with pictures on how to make the crust.

Deviled Eggs with Goat Cheese and Herbs

Deviled eggs are one of the latest food trends.  I have seen them pop up on trendy menus all over Chicago.  This church potluck staple is now hip, who knew?  Deviled eggs were one of the first things I made all by myself as a little girl.  I was so proud of my creations!  I distinctly remember my mom trying them and diplomatically smiling and nodding.  My brother was not so diplomatic.  I am pretty sure he spit it out.  There is a chance I confused the tablespoon for a teaspoon when adding salt.  Thanks brother, I am scarred.
I am happy to say that this recipe for deviled eggs with goat cheese and herbs was a great improvement from my salty version.  The addition of goat cheese adds a bit of tang and creaminess.   If you want to snazzy up the eggs you can add a small slice of smoked salmon before serving.  It is a great complement to the fresh dill.

I have found the best, fool-proof method for hard boiling eggs.  Cover the eggs with cool water and bring to a boil over medium heat.  As soon as the water is boiling remove the pan from the heat and let the eggs sit for 11 minutes.  Drain off the hot water and rinse the eggs with cold water until they are cool to the touch.  Perfect hard-boiled eggs every time!

The Perfect Pairing for deviled eggs with goat cheese and herbs is Easter!  Could there be a more appropriate dish?  You could even use your colored eggs, assuming they were kept refrigerated!  I am excited to spend this wonderful day with the people closest to me.  It truly is a day to celebrate.  No doubt we will laugh, enjoy a great meal and each other’s company, but most importantly we will celebrate the new life given to us through the death and resurrection of our Savior.
