Egg Roll Salad

It is hard to believe I have been an “Iowan” for almost three months!  I don’t know where the time has gone.  Chris and I love living here and it really feels like home.  That being said, we both agree that sometimes it feels like we are playing house and soon we will have to move back into a one bedroom city condo.  Our baby boy is growing (and boy am I growing) and kicking and moving!  I love to watch and feel him moving around and getting comfy in there.  He has a tendency to stop as soon as Chris puts his hand on my stomach.  Stinker!

A big part of the move has been my transition to working from home full time.  So far I have really enjoyed the experience.  I did find that I need to make myself get out and do things because a few days will go by without leaving my neighborhood.  I’m sure it will be 10x harder once baby boy Lam arrives!  While I no longer need to pack a lunch to take to the office I find that it is much easier to have a big batch of something made at the beginning of the week so I can have a quick lunch ready when I don’t have a lot of time away from my desk.

This Egg Roll Salad has been a staple lunch for me since I started working from home.  Not only is it delicious and satisfying it is incredibly light and healthy.  It is full of protein and fiber!  It is called an Egg Roll Salad because it tastes like the inside of an egg roll.  Side note, one thing that we miss from Chicago was the Chinese food delivery place that was a block from our condo.  The meals were just ok but they had the BEST egg rolls I’ve ever had in my life and they would legit deliver in under 15 minutes.  I miss those unhealthy rolls. 

I use my trusty straight sided skillet for this meal.  I use this skillet more than any other pan in my kitchen.  I am actually on my second generation because I wore out the first one.  Tip from the top, I found both of mine at a discount price at Home Goods.  You need a pan that has a large capacity for this recipe since you will be steaming two bags of slaw.

Roasted Vegetable Dip and Chicken Pizza

One of my all-time favorite recipes on my blog is this Roasted Vegetable Dip.  I have made it countless times.

A healthy mix of red peppers, red onion, eggplant, garlic, olive oil, and seasonings are roasted then processed with tomato paste and red pepper flakes.  It is ridiculously delicious and guilt-free. I have used it as a dip for crackers, vegetables, or as a spread on crostini or on a grilled cheese sandwich.  It is so versatile.

My new favorite use is using it as a pizza sauce.  Start with a pre-baked pizza crust, top it with a generous spread of the Roasted Vegetable Dip, cooked chicken, red onion or shallot, cheese, and a sprinkle of red pepper flakes.  It is great as a main course or cut into smaller pieces for an appetizer.

I just discovered these Golden Home Pizza Crusts.  They are super thin and crispy.  If you have a pizza stone, use it with these crusts.  The nutritional stats are pretty great too, especially when you compare it to Chicago deep dish pizza.  Egads.  I am not being sponsored in any way by this company, in fact, I have not been able to find them in my local store so I have to ask my mom to stock up for me at her grocery.

Caesar Pesto Pasta Salad with Grilled Vegetables

Pasta salads can be so bad.  Rarely, rarely do I like pasta salads from restaurants or grocery store delis.  They all have the same odd taste and are just not worth the calories.  There ARE good pasta salads out there though!  I don’t want to pat myself on the back, but this one is really good.  I think I just did it anyway.

Grape tomatoes, whole button mushrooms, and sweet onions are grilled then tossed with pasta, arugula, and a super simple dressing.

The dressing is made with store-bought Caesar dressing.  I used this yogurt variety so it was a little lower in calories and fat.  The dressing is whisked with pesto and fresh lemon juice.  If you happen to have an abundance of homemade pesto stocked in your freezer (I’m so jealous) use that, but feel free to use store-bought pesto here.

We ate this while it was still slightly warm.  YUM.  It was also great leftover chilled.  It would be fantastic with grilled chicken or steak for a full meal.

Spaghetti Squash Frittata

One food trend I am totally on board with is spaghetti squash.  My first post of 2015 was this Spaghetti Squash Pizza Casserole recipe.  I froze half of the recipe and was thrilled to have it on hand when I was in the midst of wedding planning and needed a healthy and filling meal. 

Next time you have leftover spaghetti squash try this frittata recipes.  Actually, just cook up some spaghetti squash so you can make this!  It was such a great breakfast, served up beautifully, and was delicious reheated.

There are a few different ways of cooking a spaghetti squash.  I definitely prefer roasting them and will usually do two at once to make sure I have plenty on hand.  To roast it, poke the spaghetti squash with a fork 10 times.  Microwave on high for 6 minutes (this softens the squash and makes it easier to cut in half).  Cut the squash in half lengthwise and scoop out the seeds.  Place cut side down on a baking sheet and roast for 50-60 minutes at 400 degrees, or until completely tender, then you can shred it with a fork.  You can also cook it in the microwave.  I use this method if I just don’t have the time for roasting.

Cooked spaghetti squash acts as the crust of the frittata.  Try to remove any excess moisture in the squash, this is especially important if you cooked it in the microwave.  You can either squeeze it in a clean kitchen towel, pat with paper towels, or press into the bottom of a strainer.

The filling is a mixture of sautéed vegetables, eggs, egg whites, chicken sausage, and cheese.  This recipe is totally customizable so if you don’t like mushrooms, leave them out.  If you have kale on hand, throw it in.  Would rather use swiss cheese than shredded cheddar?  Brilliant.  Do it.  I think I used a roasted red pepper chicken sausage, like this.

I have an exorbitant amount of spices in my kitchen, and I love all of them.  I used some crazy combination of Italian/Za’atar/Berbere/Jamaican Jerk in this (not really, but also not far off) but you could use whatever you have on hand, whether it is Mrs. Dash or Cajun.  Just be sure to check if it has salt so you can adjust that accordingly.

One other thing to note…. Yes, this does have cottage cheese in it.  No, you cannot tell there is cottage cheese in it.  It just adds a little creaminess and bulk, but won’t freak out cottage cheese haters.  They’re out there.

Prosciutto Wrapped Asparagus

37 days!!  37 days until I am a married woman.  I can hardly believe the wedding is so close.  I apologize to everyone in my life who encounters me, because I seem to have forgotten how to discuss anything but the wedding.  Blogging and choreographing new Zumba routines have also moved to low priority.  Stick with me!  I will be back.  There are actually be a few food related wedding items in the works, and I plan on writing about them here.  So many fun things.

Speaking of fun things…. My bachelorette party.  Holy smokes, was that a great weekend!  I was overwhelmed when 23 beautiful ladies joined me to celebrate finding the most amazing man.

This is a cooking blog, right?  Right!  Prosciutto wrapped asparagus!!  I made these bundles for the man alongside some killer meatloaf and they were amazing.

Asparagus is quickly blanched in boiling water and then plunged into an ice bath, then wrapped in salty prosciutto (that gets crispy in the oven) and topped with freshly grated parmesan and salt and pepper.  Yum.

These adorable bundles would be great at your Easter meal.  You can do all of the prep ahead of time and then throw them in the oven 15 minutes before the meal.

They are surprisingly good leftover.  Just put them under a low broiler until warmed and re-crisped.

Creole Jicama Hash with a Sunny Side Up Egg

I am so excited about this dish!  It will come as no surprise that since I have a big day (MY WEDDING!!!!!) coming up soon I am doing my best to eat healthy, workout, and tone up.  I am always searching for healthy recipes that are still delicious.  I have a fiancé to feed!

I love jicama but had only eaten it as a raw crudite, how it is served here.  In this breakfast (or any other meal) the jicama is shredded and cooked like a hash with onion and creole seasoning.  A simple box shredder is the perfect tool here.  No need to drag out the food processor. Just watch your fingers.

Jicama has a slightly sweet flavor which is great in this, especially if you balance it with a hefty pinch of salt.  

Top it all off with a sprinkle of green onions, sriracha, and an egg.  I like (love) a runny egg, but cook according to your preference.

It is such a satisfying meal.  If you are familiar with the diet that uses “points” this is only 3 points!!!  You can’t beat that.  It is also paleo friendly for my paleo friends out there!

Spaghetti Squash Pizza Casserole

I hope you all had a fantastic holiday season!  Mine was absolutely wonderful.  It was my first Christmas with my fiancé and his family, so that made it extra special.

We also had lots of good food!  No surprise there.  One of our family traditions is a meal of homemade chicken and noodles (my dad and I make the noodles) over mashed potatoes.  Starch on starch.  Then a dessert of cookies.  Why not?  Every meal on Christmas break seems to have dessert.

I always look forward to getting back into my healthy routine after the new year.  This year it is especially important since I have a wedding to prepare for!  Yikes!

Each year I post a healthy New Year’s resolution recipe.  




This year it is a delicious Spaghetti Squash Pizza Casserole.  I adore spaghetti squash.  It is such a great pasta alternative that is full of fiber and nutrients.  Here it is combined with my favorite pizza toppings, sausage (I used turkey), green pepper, onion, and mushrooms.

Use your favorite spaghetti sauce.  I like Mario Batali’s spicy arrabbiata sauce.

I baked mine in two dishes so I could put one directly in the freezer for a healthy meal that is ready to go when I am short on time.
