Perfect Pairing: Naan
One of my favorite breakfasts is smoked salmon, or lox, on a bagel with cream cheese, capers, and onions. I love that combination. This smoked salmon pizza has a similar flavor profile but also includes fresh lemon, fresh dill and smoked gouda cheese. It is perfect cut into small pieces for an appetizer or served as a main dish.
The Perfect Pairing for this pizza is naan flatbread. Naan is an Indian flatbread that is usually cooked in a clay oven. I think it tastes like a hybrid of pizza crust and pita bread. While it may not be available in all grocery stores, I see it popping up all over the place. So keep an eye out for it! You can certainly make this on normal pizza crusts but I really like the texture of naan for this smoked salmon pizza.
Smoked Salmon Pizza
Ingredients:
· 1 large pizza crust or 2 naan flatbreads
· 8 oz cream cheese (I used light), softened
· Zest of one lemon
· Juice of ½ lemon
· 2 Tb chopped fresh dill
· Salt and pepper, to taste
· 4 oz. smoked salmon pieces
· ¼ lb smoked gouda cheese, sliced
· 1 shallot, sliced
· 2 Tb capers, drained
Directions:
Preheat your oven to 375 degrees F. Place the pizza crust or naan flatbreads on a cookie sheet. Spray the crust/naan with cooking spray and toast in the oven for about 5 minutes, or until the edges start to brown.
Meanwhile, in a small bowl combine the cream cheese, zest, juice, and dill. Mix to combine. Taste for seasoning and add salt and pepper.
Once the crust has toasted, spread on the cream cheese mixture. Top the crust with salmon, gouda slices, shallots, and capers. Return to the oven for 10-15 minutes, or until the cheese has melted. Garnish with extra dill, if desired.
