Oh friends, I have a treat for you.
I am having a hard time coming up with the words to tell you how delicious this salad is.
I am the daughter of a farmer and during late summer we have many meals that consist of just sweet corn. It does not get much better than good sweet corn right out of the field.
It is hard to improve on straight up sweet corn, butter, salt, and pepper, but I think this salad is up to the task. Adding crispy bacon, grape tomatoes, basil, and avocado definitely does not hurt!

The Perfect Pairing for this salad is a slotted spoon. There is nothing fancy about a slotted spoon but it is a great tool for this recipe. You will need to remove the bacon from the grease to drain, and the easiest way to do that is with a slotted spoon. Same thing with the onions that have been cooked in the bacon grease. Yep, they are cooked in the bacon grease. They don’t suck.

Ingredients:
· 8 slices of bacon, chopped
· 10 ears of fresh corn
· 1 small red onion, chopped
· 1 pint of grape tomatoes, halved
· 10 basil leaves, thinly sliced
· 1 Tb apple cider vinegar
· Salt and pepper, to taste
· 2 avocados, diced
Directions:
Cook the chopped bacon in a skillet until crispy. Remove and drain on a paper towel. Remove all but one tablespoon of bacon grease from the pan, reserve extra bacon grease. Add the chopped onion to the pan and sauté until tender.
Cook the corn in boiling water for 10 minutes. Remove and place under cool water so it is easy to handle. Cut off the corn kernels and place in a large bowl. Add the halved tomatoes, sautéed onions, sliced basil, and apple cider vinegar. Stir to combine. Taste for seasoning and add salt and pepper. You can also add some of the reserved bacon grease at this time if you are so inclined.
Carefully stir in the diced avocado, until evenly combined. Top with crumbled bacon.
Oh my goodness. This looks and sounds amazing. Do you want to hear the strangest thing? I have always hated bacon with a fierce and first passion. I didn't even like it near my food. And if Ryan tried to be tricky and make it while I was gone - he was totally in trouble.

I've been eating corn like crazy lately and this salad looks so appealing to me! All of the ingredients look so fresh and colorful! Corn and avocado are a match made in heaven in my opinion. Yummy salad!
