Un-Recipe Files: Foil Pack Grilled Potatoes

I don’t know about you, but when I am grilling I would prefer to make the entire meal on the grill rather than turning on the oven or stove. 
It is so easy to make a foil pack of potatoes and throw them on the grill along with whatever you are cooking up for dinner.
If you want to hurry the process along a bit, you can microwave the sliced potatoes in a covered casserole dish with a little water to steam them before they go on the grill.  If you are using bacon you can also crisp that up a bit in the microwave before adding it to the foil pack.
The beauty of this is that you could serve the potatoes right out of the foil and throw away the mess after dinner!  So easy!
Here is what I did...
  • Lay out a couple pieces of heavy duty foil and spray liberally with cooking spray.  I like to double up the foil on each packet.
  • Add sliced potatoes (I used thin skin yellow potatoes so I did not have to peel them), sliced onions, chopped bacon, salt, pepper, and parmesan cheese to the foil.  A picture is below.
  • Top everything with dots of butter and wrap it up tightly in the foil.
  • Grill alongside your hamburgers until the potatoes are cooked through and browned.
