#LamsInLove, Part 2


I am back to reality after a dream wedding and honeymoon.  I’m not going to lie, real life is a bit of an adjustment.  Even though I miss the excitement of wedding planning, the amazing landscape of Hawaii, and most of all, so much time with my honey, I am looking forward to life as a wife.  A WIFE!  I can still hardly believe it.

Where do I begin?  Our wedding was an absolute fairy tale.  It was better than I could have imagined.  The day just flew by in the blink of an eye.  When I think back to it I have to question if it really happened.  It feels like a dream!  I can’t wait to get the professional photographs and video back to relive all of the special moments.  I could turn this into a tome, but here are some of my favorite moments of the weekend.

We kicked off the weekend with a ladies tea at The Drake Hotel.

My mom, who is the queen of gift wrapping, made the tables sparkle with these amazing gifts.

The flowers are handmade.  Each petal was held over a candle to get it to curl!  They were spectacular.

The bridesmaids received their jewelry for the wedding day, monogrammed tote bags, monogrammed shirts to wear while getting ready, and these purses.   My mom and I made all of them.  Well, my mom did most of the work but I did cut all the fabric and sewed one entire purse by myself!  It was such a fun project!  At times we thought we were crazy.

THE BIG DAY!

Then the moment I had been waiting for, the “first look” with Chris.  Oh buddy was he a sight.  So incredibly handsome.  Even though it was teeth-chattering cold (thanks a lot Chicago) I barely felt it!

The ceremony was beautiful.  It was extra special because Chris’ father, a minister, married us.

Then to the party!  I was so excited to get my first glimpse of the reception.  It did not disappoint.  It was better than I had pictured.  The flowers, the lighting, the table settings, the chandeliers, everything was just perfect.  It made every minute of planning worth it.  The band was insane (they play everything and everyone raved about them) and the food was scrumptious (the candied bacon and chicken and waffle appetizers were crowd favorites).

Speaking of dancing…. My husband surprised me with the most AMAZING dance routine ever to Uptown Funk.  I assume once I have the professional video it will go viral.  Unbelievable.

My dad’s toast was the definition of a tear-jerker.   All of the toasts were so special and heartwarming.  Can I please go back and do it all again?

Then Chris and I had THE BEST HONEYMOON EVER in Hawaii.  We are pretty sure it was the best honeymoon any one has ever had.  Ever.

I had some amazing food and pool drinks that will definitely be replicated.  Hopefully they will show up on the blog.  This is a cooking blog, right?  It has been hard to tell that over the past few months.  I can’t wait to start working on it again.

#LamsInLove


Today is the day!  Today is the day I marry the man of my dreams.  I have said this before, but if 10 years ago when I moved to Chicago someone told me I would get married but it would not be for a decade.... well I would not have been thrilled.  Turns out God had incredible plans for me.  Better than I could have ever, ever imagined in a million years.  I’ll save the rest of the sappy stuff for our husband and wife speech!

From the start of wedding planning it was important to us that our wedding reflect our style, lives, etc.  We tried to leave our mark wherever possible.  Since I write a cooking blog I wanted to do something cooking related, but I was definitely not cooking dinner for ALL of our family and friends.  My sister-in-law came up with the idea of salt and pepper as a favor.  Done!  No ordinary salt and pepper will do.  

Tonight when our guests arrive at the reception they will pick up their escort card which doubles as their favor.

Inside are jars of Sriracha Salt and Citrus Pepper that were made with love.

Kosher salt was mixed with lots of sriracha and then dried.

The citrus pepper was made with 28 pounds of citrus fruit that we zested, and zested, and zested.  I was so thankful to have help!

In case you were curious, 28 pounds of citrus equals about 3 cups of dried zest.

It was important to me to give some ideas to our guests on how to use the Sriracha Salt and Citrus Pepper.  I have been using the Sriracha Salt almost anytime I would season with kosher salt.  There is a bit of a kick, but it is not super spicy.  I really like it on scrambled eggs or on hard boiled eggs at breakfast.  Both are great on popcorn, steamed or roasted vegetables, grilled fish, and anything with avocado.

I love Pioneer Woman’s rosemary rolls and the last time I made them, I swapped out the regular kosher salt for the Sriracha Salt.  Divine!

These are such a delicious and easy side dish.  I just swapped out the kosher salt for Sriracha Salt and the pepper for Citrus Pepper.

My favorite dish was a roasted chicken.

The chicken is cut down the back and rubbed with olive oil, lemon juice, garlic, and Sriracha Salt and Citrus Pepper.

One year ago on Perfecting the Pairing:  Grilled Chili Lime Sweet Potatoes - Perfect with Citrus Pepper

Sriracha Salt and Citrus Pepper Roasted Chicken

Ingredients:

  • 1, 4-5 lb roaster chicken
  • 2 Tb olive oil
  • 3 Tb lemon juice
  • 5 or 6 garlic cloves, chopped
  • 1 tsp Sriracha Salt
  • 1 tsp Citrus Pepper


Directions:

Preheat the oven to 350 degrees F.  Prepare the chicken by removing the innards, rinse, and pat dry with paper towels.  Cut the chicken down the back with kitchen shears  or a sharp knife.  Open the chicken and place cut side down on a rimmed baking sheet.  Rub the olive oil, lemon juice, and chopped garlic all over the chicken.  Sprinkle the Sriracha Salt and Citrus Pepper all over the bird.  Roast in the oven for 45-60 minutes, until the interior temperature reaches 165 degrees F.


All the chicken to rest for about 10 minutes before cutting into it.  Serve with the juice that collected in the pan.

Prosciutto Wrapped Asparagus

37 days!!  37 days until I am a married woman.  I can hardly believe the wedding is so close.  I apologize to everyone in my life who encounters me, because I seem to have forgotten how to discuss anything but the wedding.  Blogging and choreographing new Zumba routines have also moved to low priority.  Stick with me!  I will be back.  There are actually be a few food related wedding items in the works, and I plan on writing about them here.  So many fun things.

Speaking of fun things…. My bachelorette party.  Holy smokes, was that a great weekend!  I was overwhelmed when 23 beautiful ladies joined me to celebrate finding the most amazing man.

This is a cooking blog, right?  Right!  Prosciutto wrapped asparagus!!  I made these bundles for the man alongside some killer meatloaf and they were amazing.

Asparagus is quickly blanched in boiling water and then plunged into an ice bath, then wrapped in salty prosciutto (that gets crispy in the oven) and topped with freshly grated parmesan and salt and pepper.  Yum.

These adorable bundles would be great at your Easter meal.  You can do all of the prep ahead of time and then throw them in the oven 15 minutes before the meal.

They are surprisingly good leftover.  Just put them under a low broiler until warmed and re-crisped.

Grilled Vegetable Salad with Miso Dressing and Toasted Cashews

I officially have spring fever.  Just a taste of sunshine and 50+ degree temperatures here in Chicago makes me want to grill, pick asparagus, clean my garage, and wash my windows.  The coming of spring also means my wedding is getting really, really close!  I am so incredibly excited!  I have been busy with plans and DIY projects.  We will see if ALL of the DIY projects actually happen.  Somehow the list keeps getting longer, not shorter.

I can’t wait to take the cover off of my grill!  I am getting tired of indoor cooking.  Baked or roasted meat is just not the same.  I also love grilled vegetables and make them at least once a week in grilling season.

I made this fun salad for a picnic at Ravinia, an outdoor concert venue where we attended the Food Network festival.  I wanted to have a couple “scoopable” salads that were not your standard pasta, potato, or lettuce varieties.  This was so good.  It is a great combination of grilled vegetables, rice, and a simple miso dressing.  The toasted cashews put it over the top.

I used bell peppers, red onion, and Portobello mushrooms, but you could also use asparagus or other mushroom varieties.  The veggies are simply seasoned with salt and pepper and then cooked  until they have grill marks and are just tender.

The veggies are cut into bite sized pieces and mixed with rice and the miso dressing.  I am loving miso.  Expect more miso recipes on here soon.  I used the Uncle Ben’s Ready Rice packet for this recipe.  So convenient!  Stir in some fresh basil and toasted cashews and you have an incredible salad.

Impossibly Light Pineapple Whip

I am an adult Disney fan and proud of it.  Now, don’t get me wrong, I don’t wear Mickey ears (I may proudly wear a vintage Mickey t-shirt to bed) and I don’t wait in lines to meet characters, but I unabashedly love Disney World.  Every time I am there I truly feel like I am in the happiest place on earth.  They just do everything right!  It is magical.

I was lucky enough to go to Disney twice in 2014.  No complaints here!  The first trip was with my parents in March inspired by a free hotel stay. Then in July I had an incredible trip with my parents, brother and his family (including two little girls), and his in-laws.  I wrote about that trip in this post. 

I have some must-dos at each park, especially at Magic Kingdom.  I run a tight schedule.  I wore my parents out!  My fitbit told me I was averaging about 25,000 steps per day.  Most of the requirements are the attractions like Splash Mountain, Pirates of the Caribbean, Small World, etc. but there are also some mandatory food stops.  While I am on the subject, the dining at Disney is pretty incredible.  One of the best meals I have ever had was at Canada at Epcot.  Back to the Magic Kingdom and required snacks.  One is a Mickey shaped rice krispy treat with the ears dipped in chocolate.  They make me so happy.  The other one is the Dole Pineapple Whip sold at Aloha Isle in Adventureland.

Apparently the Dole whip is only sold at Disney and at the Dole pineapple plantation in Hawaii.  Honeymoon stop??  It is a pineapple flavored ice cream concoction that you can eat solo, mixed with vanilla soft serve, or topped with pineapple juice.  It is unbelievably tasty.  When I was at Disney in March I was pretty darn bummed that the line was REALLY long and I didn’t have enough time to wait.  Remember, I was on a tight schedule.  I made it a priority when I was back in July.  It did not disappoint!

When I got home I was determined to try to make something similar.  I finally came up with an incredible substitute.  Not only is it light and delicious it is ridiculously easy and healthy.

A bag of frozen pineapple chunks are whirred in a food processor until broken down into tiny pieces.  This will make a REALLY loud noise and will rock the processor violently.  Stick with it and it will settle down.  Then you add a single egg white and some honey for sweetness and it turns into this unbelievably light pineapple whip.

Of course, I have to add a disclaimer about raw egg whites.  Be sure to use pasteurized eggs and if you are squeamish about it, avoid the recipe.   I will let you do your own research on the egg white issue.

I have also done this same method using mixed berries and it was equally delicious. 

Guilt free, refreshing, and so so tasty.
