Moto Chef for a Day Experience – Part 1

At a charity event a few years ago I bought a silent auction package with my friend, Amy, which included a chef for a day experience at Moto restaurant.  After much deliberation on what we were willing to spend, we decided on a number and we won!  We are both huge foodies so this was very exciting. 
To give you some background, Moto restaurant is known for their avant-garde cuisine and use of molecular gastronomy.  They just received a Michelin Star, which is a huge deal.  The chef, Homaro Cantu, is very well-known and has appeared on the cover of Gourmet magazine, competed on Iron Chef America, and has dozens of patents on some mind-blowing food related technology.  He even had his own show with co-host Ben Roche called Future Foods. 
Needless to say we were over the top excited for our day in the kitchen.  When the day finally arrived we showed up at the back door right on time decked out in our comfortable shoes.  When Chef Cantu opened the door we were both a little star struck, to say the least.  Chefs are serious celebrities to us. This is kind of like a Bears fan interacting with Urlacher.
Anyway, he told us they were filming in the kitchen that day so we were not able to cook with them, but he invited us to come back for dinner that night.  We were both disappointed that we were not able to cook but THRILLED that we got to actually dine there. 
Our meal was absolutely amazing.  The menu that night included an edible menu (they are famous for their edible paper), a Cuban sandwich that looked just like a cigar (it was even served in an ashtray), a few courses that included dry ice, and many other spectacular items.  We loved every single bite.
Fast forward a couple of years and Amy and I were at another charity event with the same package.  We loved our meal at Moto so much, but we both still wanted to experience the kitchen.  So we bid (competitively) and won! 
Once again we arrived at the back door full of anticipation.  This time we were greeted by the adorable Richie Farina.  You may recognize him from Top Chef, Season 9.  Again, we were both a little star struck. 
Richie gave us a tour of the restaurant and provided us with some very stylish aprons and chef’s coats.

Then they put us to work!  My first job was to stem sea beans.  I knew nothing about sea beans but I was about to become very familiar with them.  That container held a LOT of beans.  They were actually really tasty.  Crunchy and salty!

After I finished my sea beans I moved on to filling flasks with a bourbon infused cocktail. 

I was totally geeking out at this point.

Amy was given instructions by Ben Roche on how to make coffee bean sachets.  Every diner would get one of these in their first course.  Just wait until you see what actually goes into the first course….

We even got to have lunch with the staff.  It was around this point that Amy and I decided we absolutely must come back for dinner that night to enjoy our efforts.  I am so glad we decided to do this because it was out of this world!  Even better than the last time we had eaten there.

We also got a tour of their indoor hydroponic garden.  They harvest microgreens from this for every meal service!

Here we are with Richie after we finished cooking.  He pretty much told us that he didn’t know how they got that Michelin star without having us in the kitchen.  Maybe he didn’t say that exactly, but I got the gist.

Garlic and Herb Cheese Crostini with Summer Tomato Sauce

If you go to my recipes link you will notice that the area with the most recipes is the appetizer section.  I don’t know if this is because usually I make multiple appetizers at once for a party, or if I just really like appetizers. 
Today I am adding another great recipe to that section.  I can’t say enough good things about this tasty little canapé.  I love the Summer Tomato Sauce I wrote about last September and wanted to re-purpose it for use in an appetizer.  It is so good on this cheesy crostini.  The bread is toasty, the cheese is creamy, and the sauce is sweet and full of summer flavors.  It is a cinch to make and will be a hit at any party.  I served it up before Easter dinner and the platter was empty in minutes.
The Perfect Pairing for this recipe is good old cooking spray.  I used to brush my bread slices with olive oil to crisp them up but a coating of cooking spray will do the same thing, and it is a lot easier.

Rosemary Dinner Rolls

The Pioneer Woman does it again!  This rosemary roll recipe was featured on her Food Network show.  By the way, I love that show and I am sad that there are no new episodes.  Anyway, these rolls are so simple that they can hardly be called a recipe.  I could almost put them in my Un-Recipe Files!
We made these rosemary rolls for Easter dinner and I think they received more compliments than any other dish on the table.  That is saying something because we had some good eats at that meal.  
Ree says to make them in a cast iron skillet but we made them in baking dishes and it worked beautifully. 
They look so simple... but looks are deceiving.  You would not believe how much the addition of butter, salt, and rosemary changes the humble roll.  I recommend you make these at your next family dinner.
The Perfect Pairing for this recipe is Rhodes Traditional White Dinner Rolls.  That is what we used and they were light and fluffy.  Yum!

Best Ever Blueberry Muffins

Imagine the best blueberry muffin you have ever had….  Got it?  I would be willing to bet that it is not as good as this recipe. 
I ran across these blueberry muffins on the blog, Cutting Edge of Ordinary.  She called them To Die For Blueberry Muffins, and that is about right.  I am calling them Best Ever Blueberry Muffins.  Whatever you call them, they are outstanding.  Thank you for sharing this recipe! 
I have a blueberry bran muffin recipe that I make all the time that is light and healthy.  I will share that on the blog in the future.  When I want something a little more decadent, I will be making this version.  The crunchy streusel topping sends them over the top.  You may just want to double the batch.

The Perfect Pairing for these muffins are hard boiled eggs.  I made them for Easter breakfast and they were great with the eggs.  It was a light breakfast with protein and something a little sweet.  The best thing about this breakfast is that it can all be made ahead of time and set out in the morning.

Un-Recipe Files – Homemade Nutty Bars

Remember Little Debbie Nutty Bars from your childhood?  Perhaps you were the kind of kid that separated the layers and ate each one individually in tiny bites to make it last.  No?  Ok, that was just me. 
We never had Little Debbie treats in our house growing up, so if I somehow got my hands on one I savored it.  My brother used to joke that the only “sweet” things in the house were chocolate chips and those silver BBs used to decorate cookies.  He may have been exaggerating a bit.
My mom was an amazing cook and would make us homemade apple pies, cookies, etc. which are 10x better than Little Debbie snacks.  I am actually so glad we did not grow up with any of those things. 
Anyway, even though those Nutty Bars are tasty they are full of nasty stuff.  Check out the ingredients label. 
I saw something online about making your own version at home, and decided to give it a try.  I used a good quality dark chocolate, crunchy peanut butter, and matzo crackers.  They were pretty tasty!
To make your own Nutty Bars….
  • Snap the matzo crackers into strips.  I tried every which way to make these even but always ended up with jagged pieces and a whole lot of crumbs.  I decided I liked the rustic look.
  • Stack up three pieces of cracker that look about even in size.
  • Melt the chocolate over a double boiler, or in the microwave.
  • Microwave a bowl of crunchy peanut butter for 30 seconds to make it spreadable.
  • Using a butter knife, spread the peanut butter between the crackers and sandwich them together.
  • Top off each cookie with a layer of chocolate.
  • Refrigerate until just set.
  • Serve at room temperature.

Caramelized Onion, Fontina, and Prosciutto Flatbread

I struggled with the name of this recipe.  There is so much I want you to know about it!  In addition to the caramelized onion, fontina, and prosciutto there are chopped dates and a salad of fresh greens.  I could not figure out how to make all of those things fit in the title. 
I made this for a recent get together with my girlfriends.  We all loved it.  I look forward to those nights so much.  We always have so much to catch up on with each other’s lives.  There is never enough time to cover all of the topics.  I talked about our planning process in this post.  We always have a delicious spread, this night was no different.  We all end up hanging around my island and munching on the dishes.  By the end of the night it is a bit of a mess but you can tell we enjoyed ourselves!
I absolutely loved this flatbread.  It had the perfect combination of sweet and salty.  The salad on top adds a brightness that pairs nicely with the rich cheese and prosciutto.  I will definitely be making this again.

The Perfect Pairing for this flatbread is great music.  Great music is a must at any party, in my opinion.  My absolute favorite group right now is Mumford and Sons.  I think they are pretty well known, but I feel like I need to promote them to those folks who don’t know them yet.  I dare you to listen to them and not tap your toe.  When I hear Mumford and Sons I feel like I am in a pub in the Temple Bar district of Dublin.  Some of my favorite songs are listed below with YouTube links if you are interested in listening to them before committing to an iTunes purchase.
If you like Mumford and Sons you would probably also like the City and Colour album, Bring Me Your Love.  I ran across this group on Pandora and found myself “liking” their songs over and over.  They have a great laid back sound that is perfect for background party music.  Admittedly, their lyrics are pretty depressing so I suggest just focusing on the melody.  That is why it is perfect for background music!
One final favorite is Galway Girl by Mundy and Sharon Shannon.  This song was wildly popular when I was in Dublin a few years ago.  Just listening to it makes me want to go back to Ireland.  I was in Dublin for work and extended a few days to experience Dublin and the Cliffs of Moher.  I was ridiculously lucky with the weather at the cliffs (so I am told).  Check out that view.

Spinach and Artichoke Grilled Cheese

Spinach and artichoke dip is fantastic and so is a grilled cheese.  Combine them and you have a really awesome specialty sandwich on your hands, or in your hands.
The sandwich includes a creamy spinach and artichoke spread and a layer of fresh mozzerella cheese.  The base of the spread is Spinach and Artichoke Boursin.  You may remember my confession of love for Boursin cheese from this postMy original plan was to buy the garlic and herb variety, I had no idea they made a spinach and artichoke flavor.  Once I saw that I knew I had to use it in the recipe.  If you cannot find that flavor you could easily substitute the garlic and herb cheese.
The Perfect Pairing for a spinach and artichoke grilled cheese is this tomato bisque recipe.  It is super simple and can be made in the time it takes to grill the sandwiches.  Perfect for dunking!
